This is a great breakfast alternative to shake up your morning meal with added protein:
1 cup uncooked quinoa
2 cups water
1 tsp cinnamon
1 tsp giner
1/2 tsp nutmeg
Greek yogurt (plain, vanilla or flavored)
1 cup finely chopped nuts (I chopped a mix of pecans and walnuts and set aside in a covered container ready to use)
fresh berries or bananas
1. The night before, combine the quinoa, water and spices in a saucepan and cook the quinoa as directed. Transfer to a bowl and keep in the fridge.
2. Chop up the nuts so they are ready to use in the mornings when you are pressed for time.
Easy assembly for breakfast:
Scoop desired amount of cooked quinoa. Top with Greek yogurt, chopped nuts and berries or sliced banana. Enjoy! 🙂
